Peruvian Choclo is a large, starchy variety of corn native to the Andean region, particularly Peru. Characterised by its plump, tender kernels and unique flavour, choclo has a slightly sweet and nutty taste compared to standard sweet corn. 

 

Choclo is commonly used in a variety of traditional Peruvian dishes, such as ceviche, where it's often served alongside the seafood to add texture and sweetness, or in humitas, a type of steamed corn pudding.
